Margarita Cookies with a Kick
These adult-friendly cookies will have you saying "it's 5 o'clock somewhere." Not only do they taste like a margarita, but there's tequila in the glaze and jelly!
Note: follow the recipe carefully. You really need the lime zest, not just fresh lime juice, to get the full margarita flavor.
Makes 35 cookies.
Ingredients:
Cookies
- 1/2 cup butter, softened
- 1 cup sugar
- 1/3 cup vanilla yogurt
- 2 teaspoons lime zest
- 2 tablespoons silver tequila
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 1/2 cups flour
- Jar of Laurel Hill Margarita Jelly
Glaze
- 1 1/2 cup powdered sugar
- 2 tablespoons silver tequila
- 2 tablespoons fresh lime juice
Directions:
Cookies
- Preheat oven to 350 degrees
- Combine butter and sugar in bowl.
- Add yogurt, lime zest, and tequila. Then add baking powder, soda, salt, and flour.
- Form dough into balls the size of a walnut and place on cookie sheet. Flatten balls of dough slightly with back of a spoon and add Laurel Hill Margarita Jelly in each imprint.
- Bake for 12 minutes then allow cookies to cool on the pan for 2 minutes before transferring to wire rack to cool completely.
Glaze
- Combine powdered sugar, tequila, and fresh lime juice and mix well.
- Use a spoon to pour a small amount of glaze on each cookie and spread with the back of a spoon. Glaze with set in 5 minutes.
- Cover in green sugar for an added festive look!
