Blueberry Vinaigrette Dressing
1 1/2 c. Blueberries
1/4 c. Sugar
1/4 c. Laurel Hill Port Wine Jelly
3 Tbsp. Red Wine Vinegar
1/2 c. Extra Virgin Olive Oil
Bring above ingredients to a simmer. Cool then strain, discarding solids. Wisk 1/2 c. berry liquid with 1/2 c. olive oil. Add salt and pepper to taste.
